Tucked in the back streets of Ubud Bali’s spiritual centre, lies a culinary Mecca attracting health and well-being devotees from around the world. This mecca of real food lies one of my all-time favourites, Alchemy Cafe, filled with organic, unprocessed plant-based offerings from culinary chefs who have introduced Bali to a real food menu that is 98% RAW. The salad bar at Alchemy Cafe is incredible. It’s a cleansing experience as each ingredient is organic and has an incredible amount of intention. It’s not just a bunch of hippy greens, no. The large salad bar is an incredible offering that consists of many fermented foods, seaweeds like ish moss, kelp wakame, and nori, and house-made pickles and their famous dressings that come in all thicknesses and flavours.

This recipe is one of their dressings. It’s thin and watery and I love it. Especially in a bowl of salad with some grain, say quinoa or rice. You can add some activated cashews to thicken up the dressing while blending it, but as I said, I like it the way is.

Bought pesto vs homemade? Let’s think about commonly bought pesto. The buyer and EATer have no control over what makes up a jar of bought pesto. Oil, salt and acid… Is it real salt?? or is it a man-made salt that’s filled with anti-caking agents in it? Not sure?? Is it good quality oil?? Or is it a veggie oil that’s produced using many different veggie oils? And what does that mean to your organs? And is the acid real?? Would it be fresh citrus? Limes or Lemons? What possibly could it be if it’s not fresh?

At the end of the day, food science is within a jar of pesto compounds in the body.  It will have major effects long term. This recipe is a simple fast and easy place to start when it comes to pesto.

This is a gorgeous little vegan Lentil soup that is freezer-friendly with easy-to-find ingredients in your local supermarket. This is my go-to recipe if I don’t feel like cooking. I made this as simple as possible. No frills. Perfect for the cold weather.

This soup is super tasty and healthy too! You can make a big batch and freeze it for later. It’s so convenient when you’re too tired to cook. I kept the recipe really basic, so anyone can make it. It’s just what you need on a chilly day!
