How To Make Healthy, Guilt-Free Caramel Popcorn

My mates are an interesting bunch. They never let me forget that we chefs don’t get to prepare only our fancy recipes. They sometimes have these very random cravings, so the other day when they were in my studio, they made me get them popcorn. As they explained, they wanted caramel-flooded, wholefood, good-for-your-organs, Cynthia-style popcorn.

I love popcorn but didn’t always feel good after eating it. Luckily for me, I’m surrounded by people who bring me wisdom from all walks of life, and so it happened that one day my friend Mailijai told me a story of how her grandmother used to make popcorn. Her biggest trick was that she used white corn kernels. It changed my way of making this addictive snack and you can read all about it in my blog post on healthy popcorn.

I went even further and came up with a lush, rich and simply gorgeous caramel syrup that goes hand-in-hand with popcorn. The best thing is that you won’t feel guilty at all after eating a full bowl of these salty and caramelly treats.

Recipe!

~INGREDIENTS~

 

  • Olive Oil, as much as needed
    Salt, to taste
  • 1/3 cup White Popcorn Kernels
  • 1/3 cup Coconut Sugar

  • 1/4 cup Water
  • 1/2 tsp Vanilla Syrup
  • 1 tsp #COMFORT

~METHOD~

Heat a pot on high and pour in enough oil to cover the bottom. 

Add a generous pinch of salt and drop in the popcorn kernels.

Put the lid on and start shaking the pot while the kernels are popping.

When done, transfer the popcorn to a bowl and wipe the pot clean.

Add the sugar to the same pot along with the water and vanilla.

Stir occasionally while the mixture is turning into a syrup.

When the mixture has got a thick, syrup-like consistency, add half of the popcorn to the pot and stir. Make sure that you get popcorn nicely coated with caramel.

Transfer to a separate bowl, invite your friends and enjoy!
