White Chocolate And Hazelnut Cookies That Are Totally Addicting

It is a known fact that I am extremely addicted to chocolate and cookies, and these white chocolate and hazelnut cookies are so delicious it will really be difficult to stop eating them! I seriously should consider counseling. LOL!

This cookie recipe is very simple and easy to make with just a few ingredients. White chocolate without white sugar – absolutely amazing! I used white chocolate that is locally made in Bali called Pods, white spelt flour, and the secret ingredient is apple cider vinegar.

White Chocolate and Hazelnut Cookies Recipe!

~INGREDIENTS~

 

  • 200g white spelt flour
  • 5g baking soda
  • 180g white chocolate, cut into chunks
  • 100g roasted hazelnuts
  • A pinch of salt
  • 50ml maple syrup

  • 50ml coconut oil
  • 2.5ml vanilla extract
  • 100ml plant milk of your choice
  • 15ml apple cider vinegar
  • 100ml #LETTINGGO

~METHOD~

Preheat your oven at 160C / 320F.

Line a standard baking tray with unbleached baking paper and set it aside.

Mix together the dry ingredients and set the mixture aside.

In a separate bowl, whisk together the wet ingredients.

Gently fold the two mixtures together till combined, DO NOT over mix.

Using an ice cream scoop, scoop the cookie dough onto the prepared tray.

Bake in the preheated oven for 15 minutes.

Let the cookies rest for a bit before enjoying them.

You need to be sensible when making these white chocolate and hazelnut cookies. There are two things you need to know before you make them – 1. Do not overmix the mix, all you need to do is a slight folding and you need to do this very gently. 2. Do not eat them just out of the oven – this can be a very hard thing to do, but trust me, these bad boys can be like a firecracker in your mouth. Get those two things right and everything in life will make sense.
