Let me share with you a fantastic recipe if you’re looking for something quick and yummy to make for breakfast, brunch, lunch, snack – you name it! The Smashed Edamame and Avocado on Toast is perfect to serve when you have people coming over. This healthy and delicious vegan recipe follows a few simple steps. So easy to make and requires only a few simple ingredients.
For those of you who don’t know, edamame are young soybeans harvested before they ripen or harden. It has buttery with a hint of sweetness and nuttiness taste. While avocado is known for its rich, creamy texture and mild flavour. And I just love these two together.
Aside from the edamame and avocado, I also used olive oil, and I just love what I had available when I made this recipe because it has an expiry date that gives me an idea of what’s happening inside the bottle, it’s wrapped in a gold foil and so it stays fresh, I store it in the fridge.
Another interesting ingredient I used is coconut yogurt (I know… I am really into this!), it’s what adds to the creaminess of the spread. And to bring it home, I added lime juice to give it that zest.
Defrost the frozen edamame.
Add edamame, avocado, olive oil, coconut yogurt, salt, and pepper to your food processor.
Press Play.
Process until it turns into a paste with a bit of texture.
Taste and adjust the seasoning.
Prepare your bread and spread it on top.
Drizzle some lime.
add your herbs and sprinkle over some hemp seeds before serving.

Simply grab whatever bread you have in the pantry – toast it if you prefer – and spread this over. I am sure you will go crazy over this spread as it’s really, REALLY yummy!
