Every time someones lets slip some of my dairy free potato bake into their mouth for the first time they are often in shock at how creamy and delicious it tastes – without the dairy!

Let’s face it, food is more than just food. The fact that we have the phrase ‘comfort food’ pretty much spells it out. But what happens when this food is not so good for us? As an example, I feel awful after eating something with dairy, congested nose and stuff, and I know many others feel the same. One of my friends says she knows she’ll “pay for it later” with stomach cramping.

I was lucky growing up in Papua New Guinea in that I never really ate sugar or dairy, so I have never used them in my home kitchen. It’s really revolutionised the way I create meals and I’m so grateful for that.

So when I saw friends missing out on their favourite comfort food dishes like potato bake I thought I’d try to re-create them with a healthy twist.

How about a dairy free creamy potato bake with cashew cream, mushrooms, paprika, garlic and onions?

Yep, the result was glorious. My friend Meg and I made this potato bake over and over again, because we loved it so much! This food goes beyond health, it’s a transition to high vibrational food with beautiful intentions that the whole family will love.

I absolutely LOVE that I have this gift for being able to take traditional comfort food that can be greasy and leave you feeling heavy and a bit ‘ugghh’, and using wholefood ingredients swaps can make something that tastes as good – or even better – and leaves you feeling light and satisfied.

Oh… here is the recipe!

INGREDIENTS

  • 10 unpeeled small potatoes, thinly sliced
  • 15 large mushrooms, thinly sliced
  • 1 onion, thinly sliced
  • 3-5 garlic cloves, roughly chopped
  • 1 red capsicum, julienned
  • 1 red chilli, deseeded and finely diced

  • 2 cups, cashews
  • 2 1/2 cups, water, a little more if needed
  • 1 tablespoon, paprika
  • 1/2 teaspoon, salt
  • 1/2 teaspoon, pepper
  • 1 tablespoon #GRATITUDE

METHOD
  • Preheat your oven to 170C. Have a baking tray ready to go.
  • Combine the cashews and water in a blender and blend until completely smooth and creamy.
  • Mix all the ingredients along with the cashew cream in a large mixing bowl.
  • Season with salt and pepper.
  • Transfer this mix into a baking tray.
  • Sprinkle with extra paprika on top.
  • Cover with foil and bake 45 minutes to 1 hour, until fork tender.
  • Let rest for 8 minutes and serve.

Prep time 10-15 minutes

Cooking time 45-55 minutes

Serves A Big family of 4-6
