Plant-Based Meal Ideas After Intermittent Fasting

Personally, I do a lot of fasting. And I find that one meal a day has been absolutely beneficial. I know that I am not alone on this and I also know that a lot of people are asking, especially the noobs, “how do I break the fast?”

Let me help you with that. The meals I choose to cook and eat need to be super delicious and filling. Or it all just becomes painful.

Also, I find that when I am organised and have my meals planned out, it allows for more ease in the cooking process. And that one meal becomes truly a ritual when before it was a chore.

This week’s recipes are really tasty, filling, and easy to make. They are 3 of my favourites. One of the sauces is from my first cookbook – Plant-Based Love Stories and has become a fantastic staple around the world. I have had so many people tell me how they use it in place of a store-bought smoky bbq sauce. Winning!

This is a gorgeous little vegan lentil soup that is freezer-friendly with easy-to-find ingredients in your local supermarket. This is my go-to recipe if I really don’t feel like cooking. I made this as simple as possible. No frills. Perfect for the cold weather.

Tempeh and Smoky BBQ sauce? This is BBQ Tempeh Ribs! One of my glorious (and I am very proud of it) sauces, can go with so many things! You can replace the Tempeh with mushrooms, or tofu.

Roasted Cauliflower

Roasted with a little oil, cumin, salt, and pepper. Buttery and rich in flavour. Melts in your mouth.
