Today I have something special for you – something that will warm you up in winters and cool you down on hot summer days. This is a very simple recipe and if you follow it, you will have amazing, aromatic ginger tea.

I like to make this ginger tea once a week, especially when ginger is in abundance. And even when you get a lot of fresh ginger, you can even freeze it and have it throughout the whole year.

So, the basic ingredient you need for this tea is of course fresh ginger. There are many types of ginger, so feel free to use your favourite. I usually use the regular, garden-type ginger. If you look for this one, you may find young and old ginger. You will recognize young ginger with its pinkish colour on the edges. Also, its fragrance is stronger, and it is more tender so you can break it easily. Old ginger, on the other hand, is “aged” or more mature and you will notice that its colour is a bit different and it is a bit harder to break.

Let’s Make Fresh Ginger Tea

It’s tea, so it’s simple to prepare. Take some lemons and squeeze them to get fresh lemon juice. Pour this into a pot and then grab your ginger. Smash these to help them release their awesome juice. Throw them into the pot with the lemon juice and then pour some water. The amount of water will depend on the amount of fresh ginger and lemon juice you have used.

Since both lemons and ginger both have very strong flavours, you need something sweet to balance the overall flavour of your ginger tea. My number one choice is honey, and it is always better to use honey with a neutral flavour. So, look for good-quality, local honey. Add as much as you want, then whisk everything together. Taste and if it’s still too strong for you, add more honey.

When all this is ready, put it on the stove and cook on high for about an hour and that’s it! You can drink it as it is if you need something warm to cuddle you from the inside. Or you can take this to the next level.

In summer, I love to turn this ginger tea into a fizzy drink. What you need to do is let your ginger tea cool down completely. The grab a pitcher or a jug, add loads of ice together with some lime and fresh mint. Pour some soda water and your ginger tea and you have a great, healthy refreshment to cool you on hot days.

The aroma of this ginger tea is amazing, even if you drink it in this “spritzer” form. Check out the recipe below and try it out.

Ingredients

  • ¾ cup Lemon Juice
  • Ginger

  • 1.5 litre Water
  • Honey, to taste


Method

  • Pour the lemon juice in a pot.
  • Smash the ginger and add it to the pot.
  • Pour in the water together with the honey.

  • Whisk to combine and taste. If needed, add more honey.
  • Cook on high for an hour.
