Now more than ever, mums and dads (and all you amazing humans who cook for kids!) are trying to juggle the extremes of “clean eating” with what kids actually want to eat.

“Are we having a healthy dinner tonight?”, asked no kid EVER!

Instead when the kids are screaming out,


you know there’s an underlying tone of, “It better not be hippy food. It better be tasty or I won’t eat it!”

And boy I know it can feel stressful.

Us mums are trying so very hard to nourish our families in a world full of opinions of what we should and shouldn’t be eating, and it’s so bloody STRESSFUL. I often wonder how did it all get so complicated?? I know the feeling as we scratch our heads at playgroup expressing to other mums, “what the hell do we EAT”!!

How To Please Everyone!

Let me set the scene for dinner….. Meanwhile in a lovely suburb in a quiet street it’s dinner time in 2 hours and your husband and 4 year old protest in the kitchen to you, demanding they don’t want the “HIPPY” flavours of the likes of: tahini, tofu, seaweed and some bland “not” meat burger patty that took you hours to make and set.


All they want is true flavor that fills their stomachs up with joy that over flows the kitchen with aromas that leave them harping at mum, “When’s dinner ready mum, smells Amazeballs”. That statement alone is to me a healthy home kitchen.

It’s a harsh reality in this day and age of what the hell to eat. The family meal has some how become a political fight in the minds of many of us mothers around Australia and the world. Especially those mums who have family members that have a special dietary requirement and the whole family don’t want to “suffer” for it…

Healthy Dinner Tonight Recipe Game Changer!

A gift to all us mums at home (and dads of course), is a recipe I created a few years back now. It’s one that has the house smelling like an old classic family meal is about to be presented. A meal that everyone loves and wants more of and won’t have any more protesting happening in the kitchen.

It’s the humble yet super healthy and tasty Potato Bake. The one dish that adds to the family meal that covers the dairy free and gluten free family members without the compromise to the others that share a chair at the dinner table.

Enjoy this recipe, enjoy how the whole house will smell of Potato Bake. Enjoy licking your fingers and scraping around the baking dish for those crispy edges of yummy-ness.

Epic Potato Bake Recipe


  • 10 unpeeled potatoes, sliced thinly
  • 15 mushrooms, sliced thinly
  • 1 onion, sliced thinly
  • 3 garlic cloves, chopped roughly
  • 1 red capsicum, julienned
  • 1 red chilli, deseeded and diced finely

  • 2 cups of cashews
  • 2½ cups of water
  • 1 tbsp of paprika
  • ½ tsp of salt
  • ½ tsp of pepper

This was created for a true potato lover who wants to indulge in potato bake without the side effects of dairy.

  • Preheat the oven to 170°.
  • Have a baking tray ready to go.
  • Combine the cashews and water in a blender and blend until completely smooth and creamy.
  • In a large mixing bowl, combine all of the ingredients along with the cashew cream.
  • Season with salt and pepper.
  • Put all of this mix into a baking tray and sprinkle with extra paprika on top.
  • Cover with foil and bake 45 minutes to 1 hour, until fork tender.
  • Let rest for 8 minutes and serve.
