A Quick And Yummy Grilled Veggie Sandwich 

My grilled veggie sandwich is one of those sandwiches you can do when you have leftover eggplants and zucchini in the fridge, and you don’t exactly know what to do with them. Not to mention that good bread sitting in the freezer. And you just make it happen.

My Dad And His Sandwiches

Let me share with you a story about my dad and his sandwiches. My dad made the best salad sandwiches of all time. They were BIG in height, large in flavour, and filled full of plants with mustard and ham. He loved ham. We all used to take the piss out of him and his GIANT sandwich he would make every day. Putting this masterpiece together took time. And eating it would also take him time.

From memory, building his sandwich would go like this. Thick cuts of brown wholemeal bread, (and not just any brown bread it had to be the bread from baker’s delight), and it had to be fresh and still warm. First came the avocado, he used that instead of butter then lettuce, grated carrot, slices of red capsicum – yes, they had to be red! He ate them like apples at times, then pickled beets, and lastly ham with a spread of mustard. His sandwiches would measure in height around 10-15 cm. NO joke. He would then push it down and spend a good 40 minutes to an hour devouring it.

Well, my grilled veggie sandwich is nothing like his, but making this sandwich brought up a lot of memories for me. Food is one of the most powerful connective tools we have. We build our bonds with friends and family over dinners, we go to restaurants on dates, and we prepare food at home for others and with others. Food evokes memories that are just as powerful as other cultural products, if not more so due to the fact that they stimulate all the senses.

I miss my dad so much. Really not a day goes by when I am not reminded of him.

Grilled Veggie Sandwich Recipe!

~INGREDIENTS~

 

  • Eggplants, sliced lengthwise
  • Zucchini, sliced lengthwise
  • Mushroom
  • Red capsicum

  • Salt and pepper, to taste
  • Bread of your choice
  • Dressing of your choice
  • A pinch of #EASEANDFLOW

~METHOD~

Grill all the vegetables, until cooked.

Toast the bread.

Assemble the sandwich and serve.
