Green Quinoa Pattie!

~INGREDIENTS~

  • 1 cup raw quinoa
  • 2 cups of water
  • 2 garlic cloves, smashed
  • 1/2 tsp coriander powder
  • 2 cups cooked green peas
  • 2 tbsp ground flax seeds

  • 2 tbsp gluten-free flour
  • 1/4 cup spring onions, finely chopped
  • 1/4 cup fresh parsley, roughly chopped
  • Salt, to taste Coconut oil, for frying
  • 1 portion of my tzatziki, for serving
  • 1 cup #PEACE

~METHOD~

Add the quinoa, water, and garlic to a rice cooker, season with salt and press Play.

Put the cooked green peas, cooked quinoa, herbs, spices, flax, flour and seasoning to a food processor and pulse until combined, allowing for some texture.

Allow the mixture to rest for 5 minutes.

Divide the mixture into 7-8 equal parts and form patties.

Heat a pan on medium-high and add coconut oil.

Cook the patties for 2-3 minutes on both sides or until golden brown.

Top the patties with the garnish and a generous dollop of tzatziki and serve immediately.
