Dairy-Free Chocolate Cherry Coconut Rough

I have a cool recipe to share with you today! It’s for moms who have busy days and don’t want to spend the little free time they have searching for healthy sweets for their kids. It is for all those of you who have allergies, especially dairy allergies but you still want to eat something gorgeously sweet. It is a life-saver for all of you who want to become more conscious about their health, and it is for all of us who want to nourish our organs.

It is Chocolate Cherry Coconut Rough and it is utterly divine. Just for the sake of comparison, imagine this - you go to a supermarket to buy a box of cookies. They are chocolate, crunchy and so delicious that you can eat loads of them. But after eating just two of them you start feeling sluggish and that well-known feeling of regret starts overwhelming you.

Now imagine this. You go to a wholefood store and get some cacao butter, coconut cream, cacao powder, coconut sugar, shredded and desiccated coconut, and dried sour cherries. If you are already into wholefoods, chances are you already have most of these in your pantry.

You’ll also need some almond butter for this recipe, so I suggest you buy raw almonds and make your own almond butter in just a couple of minutes. Check out how to make your own gooey and delicious nut butter here.

Step 1 - Done! Step 2 - Gather the Kids 

When you gather the supplies, the only thing you need to do is add all of these into your food processor and blend for 5 seconds. Use this opportunity to gather your kids and let them enjoy the joy of preparing food with you. They love to help out, especially when they are impatient to eat. Lol… Why not use this as a teaching moment and show them that a proper attitude to food is based on gratefulness, appreciation and mindfulness?

If you manage to do this (and it’s one of the toughest tasks a parent needs to do), you can be sure that your kids will not reach for industrially made sweets because they will know that at home they have something nourishing and epic such as this Chocolate Cherry Coconut Rough!

Chocolate Cherry Coconut Rough Recipe Dairy Free

INGREDIENTS

40 grams Cacao Butter, melted

100 ml Coconut Cream

¼ cup Cacao Powder

⅓ cup Coconut Sugar

½ tsp Vanilla

½ cup Desiccated Coconut

½ cup Shredded Coconut

2 Tbsps Almond Butter

100 grams Dried Sour Cherries

A pinch of Salt

 

METHOD

Line a small tin with a baking paper and set aside.

Add all the ingredients into your food processor.

Whizz for about 5 seconds.

Transfer the mixture into the tin.

Pat down and spread evenly.

Keep in the fridge until set.

Slice and devour!

This recipe makes about 20-25 bite-sized pieces, but that’s the thing with healthy food. It is so powerful that you don’t need to eat a lot as you do when you clog your organs with highly processed food.
