It’s the middle of the week. You’re tired from working long hours. You have no time and energy left to cook but still, you’re thinking of having a lovely home-cooked meal instead of going for a takeaway. I say go for it because I’ve got you covered! Having a hearty meal even if you have no time to cook should not be difficult and complicated – AT ALL! I have here 3 plant-based, yummy, under 15 minutes recipes for you! Check them out…

It is a salad of sorts, so you can simply have it inside fresh lettuce leaves or serve it as a big salad on the table, which I personally prefer so I can DIY it myself as I do the dance of adding spoonfuls to my natural cups – lettuce.
It’s delicious, aromatic, herbaceous, and rather filling, so I figured it will make a perfect summer meal, healthy yet satiating.

The 8-minute delicious tomato chutney recipe is vegan and gluten-free. I used tomatoes and pineapple and came up with this delicious little quick chutney. It is a versatile recipe because I serve it with just about anything, have it over a warm meal, on toast for a quick snack, or with rice and dahl/lentils from my online cooking classes to give the meal some pizazz.
